Frittata with chorizo & potato.........

It is wonderful to be able to make a delicious meal out of an empty fridge more or less anyway. The great thing about a frittata is that you can substitute an ingredient , have it very simple or hot and spicy and deep with filling.

This is one of my children's favourite meals, thankfully simple too. Supper is on the table within 15 minutes from start to finish. My children's favourite combination is potato, onion and courgette. Tonight though I thought that I would try something a little different with a slight spicy kick.

What you will need
1 red onion, chopped
2 small potato's chopped into small pieces
1 small bunch or basil torn
60g Parmesan, grated
8 eggs, free range
salt and pepper to season
150g chorizo sausage, cubed



1. In a frying pan add about 3 tbsps of olive oil and fry off the potato, onion and chorizo until all cooked and slightly golden. The delicious chorizo will become soft and all of the paprika from the sausage will seep out and colour the potato and onion. Yum.
2. In a bowl crack all the eggs and whisk. Add in the Parmesan, torn up basil and a little salt and pepper.
3. In the frying pan now, add a glug of olive oil, put the heat up and tip in the egg mixture. With a spatula push the mixture down and allow to cook on one side. Then place a plate on top of the frittata and flip it onto the plate.
4. Now tip the frittata back into the frying pan and cook the other side.

Once cooked slice and serve with salad and bread. My children like the frittata sliced and placed into a wrap.
